Orange Cake

Ingredients :
16 ozs butter
16 ozs sugar
16 ozs self-raising flour
8 whole eggs and 4 yolks
1 cup evaporated milk
1/2 teaspoon vanilla essence
3 tablespoon brandy
Grated rind and juice of 2 oranges
Method :
Step 1 : In a mixing bowl, cream the butter and sugar until almost white in colour.
Step 2 : Slowly add the eggs and mix well.
Step 3 : Pour in the flour and gently fold the mixture.
Step 4 : Add in the orange rind, orange juice, evaporated milk and mix gently.
Step 5 : Pour the mixture into baking tins about half filled.
Step 6 : Bake in the oven for about an hour at 200°C.
Step 7 : Use a long tooth pick & poke in the center of the cake and if it is dry then the cake is ready.
