Cinnamon Rolls

Dough

1/2 cup water, warmed
2 tsp sugar
2 packets active dry yeast

1 1/2 cups milk, warmed
2 eggs, lightly beaten
1 tbsp salt
1/2 cup sugar
4 tbsp butter, softened
5 1/2-6 cups flour

STEP 1 : Combine first three ingredients in the bowl of an electric mixer.

STEP 2 : Let stand for 10 minutes or until yeast is foamy.

 

STEP 3 : Add milk, eggs, salt, sugar, butter and 3 cups of flour.

STEP 4 : Mix until well incorporated and smooth.

STEP 5 : Add 2 more cups of flour. Mix until smooth.
Add any remaining flour in smaller increments until dough comes together and away from the sides of the bowl.
Dough will be slightly sticky, but very smooth.

STEP 6 : Form dough into a ball and place in greased, covered bowl to rise until doubled, about 1 – 1 1/2 hours.

 

Filling

3-4 tbsp milk
Cinnamon
Brown sugar

Preheat oven to 400F

STEP 7 : Coat baking dish with cooking spray or butter.

 

STEP 8 : Remove dough from bowl onto a lightly floured surface.

STEP 9 : Divide dough in two and roll each piece out into a rectangle.

STEP 10 : Brush the surface with milk.

STEP 11 : Dust throughly with cinnamon and top with brown sugar.

STEP 12 : Roll in a swiss-roll fashion beginning at a short end & pinch seam shut.

STEP 13 : Slice logs about 1 inch thick.

STEP 14 : Place the cut rounds in the baking dish so they are just touching.

STEP 15 : Bake 15-20 minutes at 400F or until tops are golden brown.

STEP 16 : Let cool for 5-10 minutes.

    Thanks for your kind comments.
    Regarding the cinnamon powder, you can get it from any supermarket like NTUC, Shop n Save, Cold Storage which they come in those spice bottles, but I got mine from a shop (Phoon Huat) selling all kinds of baking stuffs in Bedok North.
    As for the amount of cinnamon is really depends on your taste. As for myself, I sprinkle all over until it covers the dough almost completely.

    Hi Eddie,

    I read about your blog from my collegue. I tried your cinnamon roll recipe but the layers sort of “stuck” together and it looked nothing like the perfect swirls you had in your pictures. I am trying to trouble shoot but I think it is because I didn’t put enough sugar to coat the layers.

    I live in the United States and miss Singapore a lot. Thanks for posting your recipes so that you can share them with us Singaporeans living in Western “exile”.
