Baked Curry Puffs (Quick & Easy)
Ingredients for pastry
1 kg Plain Flour
1/2 kg Butter
3 egg yolks
2 tsp baking powder
Ice water
Preparation for pastry
In a large bowl cut cold butter into flour & rub it with your fingers until the mixture resembles fine crumbs.
Add the egg yolk one at a time.
Mix well until it forms into a dough.
Add ice water if too dry.
Wrap the dough up by placing it on a piece of plastic wrap & press the dough into a flat disk.
Refrigerate this for an hour or more.
Filling
Ingredients
500 gms of diced chicken or beef if you prefer
8 medium sized potatoes
1 cup water
1 pkt “Brahim’s” Kuah Rendang Sauce (Can get from NTUC)
Preparation
Peeled the potatoes & cut into cubes
Boil them until just soft but not too mushy
Drain & put aside
Heat oil in a pan & brown the diced chicken or beef
Add the whole contents of Brahim’s Rendang Ready-Mix
Add 1 cup of water
Add the boiled potatoes
Stir well & let it simmer until almost dry
Set aside & let it cool
Roll out the dough & cut into circular shapes
Place a tablespoon of the filling onto each cut-out dough
Fold each dough into halves & seal the edges by pinching or folding with your fingers
Glaze with beaten egg yolk & bake at 225 degree C until golden brown
