Loh Mai Kai

Ingredients for rice :
1 kg glutinous rice, wash & soak for 2 hrs
1/2 teaspoon pepper
3 teaspoon sugar
1 teaspoon salt
2 tablespoon white sauce
2 tablespoon oyster sauce
3 tablespoon cooking oil
3 tablespoon sesame oil
8 ozs water for sprinkling
Method :
Drain rice & steam for 30 minutes
Sprinkle 8 ozs of water
Mix the rice thoroughly
Steam again for another 30 minutes
Place cooked rice in a big bowl
Mix all the above ingredients thoroughly with the rice
Ingredients for chicken :
6 whole chicken breast or thigh
1/2 teaspoon pepper
3 teaspoon cornflour
1 tablespoon cooking oil
1 tablespoon sesame oil
3 tablespoon light sauce
1 tablespoon chinese wine
1 tablespoon ginger juice
1 tablespoon oyster sauce
Method : Marinate the chicken with the above ingredients & leave overnight
Preparation for mushrooms :
20 dried shitake mushrooms washed & soaked for 1 hour
Boil on a slow fire with 20 ozs of water & 2 teaspoon of light sauce
Add in 1 teaspoon of sugar & 2 garlic until the mushrooms are soft
Cool & slice into strips & mix all with the chicken marinate
Arrange the chicken & mushrooms mixture at the bottom of a dish
Place the rice on top & spread evenly
Steam for 30 to 40 minutes
