Kueh Bingka

Ingredients (Note : Santan & Sugar have been reduced from original recipe)

500 ml santan
1.5 kg of grated tapioca
150 g grated coconut (optional if you want a bit of rough texture)
350 g sugar
3 tsp tapioca flour
3 eggs
1 tbsp soft butter
1 1/2 tsp vanilla essence
1 1/2 tsp salt
A bit of yellow colouring

Preparation

Mix all together , smoothly
Put in a baking tin and bake at 180 degĀ  to 200 deg – depend on your oven
It takes a while to bake until inside all cook
Test with satay stick
Do not cut immediately as it will still be soft
